That being said there is something special about chocolate truffles during the holiday season, something really, really special. They are a simple snack to keep in the fridge and an even better snack to package up and give away! I mean, we have all be caught off guard sans-gift when someone is presenting you with one. So alas, the chocolate truffle is here to save the day. Start by heating up heavy cream over a medium heat, once it boils add in a teaspoon of espresso powder. Let boil and then strain and add the hot mixture to semi-sweet chocolate. This simple truffle recipe is taken to the next level by infusing the cream with espresso. Once the mixtures sets in the fridge you can roll it into balls and coat it in your topping of choice. As chocoholics we picked cocoa powder. Return these lovely creations back to the fridge to store and you are all set.
