Non-Dairy Milks have been growing in popularity over the last decade and alternatives to traditional dairy milk have made their way into our kitchens. Gone are the days of having to settle for black coffee if you have any reason or desire to avoid milk. But what are the options and which is best paired with your morning cup? The most recognized forms of non-dairy milks are almond, soy and coconut based. Coconut milk, while higher in saturated fats than its dairy free colleagues, can add a bit of sweetness, without having to reach for a paper packet. It’s also creamy enough to make you wonder whether the barista snuck in some half-and-half while you weren’t looking. Truth. Almond milk has been on the rise, even surpassing its longer tenured soy based competitor. That being said, there is a huge debate over its duty as milk. Is it too watery? Is it fine? So the milk texture lacks but it gets the job done. Soy milk has a reputation for being a bit temperamental. If you want to avoid curdling, try pouring the soy milk into the mug first. They slowly add the hot coffee. That way the soy milk warms slowly instead of becoming hot, which is what causes the curdling. The good news is, soy milk is a darn good stand in for the lactose based classic when it comes to taste and protein per serving.
